Creamed Chipped Beef on Toast

(serves 4)

You want easy? THIS is easy! A lot of people tease me because of this recipe. But I don't care. It tastes great on a chilly afternoon and is extremely simple to make. Call it what you will...but the ol' S.O.S. is staying in my recipe files!

Ingredients~

2 Tablespoons of butter

2 Tablespoons of flour

2 cups of milk

2 4-ounce packages of dried beef (like Buddig)

Salt and pepper to taste

Bread for toast

Directions~

In a saucepan, melt the butter over medium heat.

Stir in the flour until smooth. Heat until it bubbles slightly.

Slowly stir in the milk.

Stir to keep from getting lumpy. The white sauce will thicken as it cooks.

Cut the beef into small pieces and add to the white sauce.

Turn the heat to low and continue stirring for 5 minutes.

Toast bread slices.

Place toast on a plate and top with a portion of the white sauce.
