Irresistible Boston Cream Pie Cupcakes
Ingredients
Cupcakes
1 ¼ cups all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup whole milk
Pastry Cream Filling
1 cup whole milk
¼ cup granulated sugar
1 tbsp cornstarch
2 large egg yolks
1 tsp vanilla extract
2 tbsp unsalted butter
Chocolate Ganache
½ cup heavy cream
4 oz semisweet or bittersweet chocolate, finely chopped
Instructions
Step 1: Bake the Cupcakes
Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a separate bowl, beat the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition, then add vanilla.
Gradually add the flour mixture, alternating with milk, beginning and ending with the flour. Mix until smooth.
Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
Step 2: Prepare the Pastry Cream Filling
In a saucepan, heat the milk over medium heat until it starts to simmer.
In a bowl, whisk together sugar, cornstarch, and egg yolks until smooth.
Slowly pour the hot milk into the egg mixture while whisking constantly, then return to the saucepan.
Cook over medium heat, whisking continuously, until the mixture thickens (about 1-2 minutes). Remove from heat, stir in vanilla and butter, and transfer to a bowl.
Cover with plastic wrap (pressing it onto the surface to prevent a skin from forming) and refrigerate until cool.
Step 3: Fill the Cupcakes
Once the cupcakes and pastry cream are cool, cut a small hole in the center of each cupcake.
Spoon or pipe the pastry cream into each cupcake center.
Step 4: Make the Ganache
In a small saucepan, heat the heavy cream until it just begins to simmer, then pour it over the chopped chocolate in a heat-safe bowl.
Let it sit for 1-2 minutes, then whisk until smooth.
Step 5: Assemble the Cupcakes
Spoon a small amount of chocolate ganache over the top of each filled cupcake.
Let the ganache set slightly before serving.
Boston Cream Pie Cupcakes are a modern twist on the classic Boston Cream Pie dessert, blending the softness of cupcakes with the luxurious pastry cream and chocolate ganache typical of the original. When making these cupcakes, it’s important to properly prepare the pastry cream filling, as it serves as the delightfully creamy surprise inside each cupcake. To enhance the texture, you can refrigerate the pastry cream and stir it occasionally before filling to ensure it remains smooth and free of lumps. For the cupcake base, using room temperature butter and eggs helps achieve a lighter, fluffier batter, as cold ingredients can result in a denser crumb. When folding the flour mixture into the wet ingredients, be gentle and avoid overmixing to maintain a tender texture. The chocolate ganache topping is a quick yet luxurious finish. Using semisweet or bittersweet chocolate helps balance the sweetness of the pastry cream inside, offering a perfect contrast. You can also experiment by adding a teaspoon of espresso powder to the ganache to deepen the chocolate flavor. Assembling the cupcakes requires a small cut in the center to hold enough pastry cream — using a piping bag allows for a neat and even filling. Once filled, generously spooning the ganache on top and allowing it to set at room temperature provides a glossy, firm finish that makes these cupcakes irresistible. These cupcakes are ideal for special occasions or as an indulgent treat. Storing them in the refrigerator keeps the pastry cream fresh, but they should be brought to room temperature before serving for the best flavor and texture experience. This recipe highlights the beauty of combining classic dessert elements into a single convenient cupcake format that’s both charming and tasty.
