Swirl Cranberry Pound Cake

Ingredients

For the cake batter:

• 2 cups (250g) all-purpose flour

• 1½ tsp baking powder

• ½ tsp salt

• 1 cup (227g) unsalted butter, softened

• 1 cup (200g) sugar

• 4 large eggs

• ½ cup (120ml) milk

• 1 tsp vanilla extract

For the cranberry swirl:

• 1 cup (120g) fresh or frozen cranberries

• ¼ cup (50g) sugar

• 1 tbsp lemon juice

• 1 tbsp water

Instructions

Make the cranberry swirl by combining cranberries, sugar, lemon juice, and water in a small pot. Cook over medium heat until berries pop and the mixture thickens (about 5–7 minutes). Let cool completely.

Preheat oven to 175°C (350°F). Grease and line a loaf pan with parchment paper.

In a bowl, mix flour, baking powder, and salt. Set aside.

In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla.

Alternate adding dry ingredients and milk to the butter mixture, beginning and ending with flour. Mix just until combined.

Pour half the batter into the loaf pan. Spoon half of the cranberry mixture over it and gently swirl with a knife. Add the remaining batter and repeat with the rest of the cranberry swirl.

Bake for 50–60 minutes or until a toothpick inserted comes out clean.

Cool in the pan for 10 minutes, then transfer to a rack to cool completely.
