🍒 Chocolate-Covered Cherries 🍫
Ingredients
For the filling:
24 maraschino cherries, stems removed and patted dry
1½ cups powdered sugar
2 tbsp light corn syrup
2 tbsp unsalted butter, softened
1–2 tsp reserved cherry juice (from the jar)
¼ tsp almond extract (optional, for depth)
For the coating:
12 oz high-quality semi-sweet or dark chocolate chips or chopped chocolate
1 tsp coconut oil or shortening (optional, for smoother dipping)
Instructions
Dry the cherries: Drain the cherries and gently pat them very dry with paper towels. Any moisture can prevent the filling from sticking properly.
Make the fondant-like filling: In a medium bowl, combine powdered sugar, corn syrup, softened butter, and 1 teaspoon of cherry juice. Mix with a spoon or your hands until it forms a thick, pliable paste. If it’s too dry, add another ½–1 tsp cherry juice. Stir in almond extract if using.
Form the centers: Take about 1 tablespoon of filling and flatten it into a small disc in your palm. Place one cherry in the center and gently wrap the filling around it, sealing completely. Roll into a smooth ball. Repeat with remaining cherries. Place on a parchment-lined tray and refrigerate for 30 minutes to firm up.
Melt the chocolate: In a microwave-safe bowl, combine chocolate and coconut oil (if using). Heat in 20–30 second bursts, stirring between each, until fully melted and glossy. Alternatively, use a double boiler over low heat.
Dip the cherries: Using a fork or dipping tool, submerge each filled cherry into the melted chocolate, tapping gently to remove excess. Lift out and let the excess drip off, then place back on the parchment-lined tray. Work quickly but carefully—the filling is delicate.
Set the chocolate: Let the coated cherries sit at room temperature until the chocolate hardens completely (about 1–2 hours). For faster setting, refrigerate for 15–20 minutes—but avoid condensation by bringing to room temp before serving.
Age for best flavor (optional but recommended): For the signature liquid center, store the finished cherries in an airtight container at room temperature for 24–48 hours. The cherry juice slowly softens the inner filling into a syrupy surprise.
Chocolate-covered cherries are a wonderful treat combining the rich taste of chocolate with the bright, sweet flavor of cherries. The key to achieving the perfect balance lies in the preparation of the fondant-like filling, which is made from powdered sugar, light corn syrup, unsalted butter, and reserved cherry juice. This mixture should be pliable but firm enough to wrap around each cherry without losing shape. When making the filling, it’s important to adjust the cherry juice quantity carefully; too much liquid will make it too soft to handle, while too little can cause dryness. Adding a touch of almond extract can deepen the flavor and enhance the overall profile. Patting the maraschino cherries dry is critical as any moisture on their surface can interfere with the filling’s adhesion and the chocolate coating. Using parchment paper for drying and chilling the filled cherries helps prevent sticking and maintains shape. For coating, high-quality semi-sweet or dark chocolate chips melt smoothly and provide a nice contrast to the sweetness of the filling. Adding a small amount of coconut oil or shortening aids in achieving a glossy, smooth texture that comfortably envelops the filled cherries. After dipping, letting the chocolate set at room temperature ensures a crisp shell. Refrigerating briefly can speed this up but be cautious of condensation, which may cause the chocolate to bloom or lose shine. One of the most delightful parts of homemade chocolate-covered cherries is the aging process, where storing them in an airtight container at room temperature for 24 to 48 hours creates a liquid center. This occurs because the cherry juice gradually softens the sugary filling, producing a syrupy, luscious surprise inside each cherry. These cherries are perfect for sharing during the holidays, gifting, or enjoying as a special indulgence. Experimenting with bittersweet chocolate or different extracts can customize the flavor to your liking, making this recipe versatile and rewarding to prepare.
