Easy & Tasty Banana Pudding Cookies 🍌🍪
Fun fact: A huge dream of mine is to open my own cafe! I plan to have a lot of home made sweet treats there soI thought to myself, why not begin practicing now while also making a name for myself in town! I sell these amongst other cookies at work & they’re a favorite of my coworkers so I thought I’d share the recipe with y’all. Happy Baking! -Bri 🐝🫶🏾
INGREDIENTS:
🍌 1 box of Betty Crocker Super Moist Yellow Cake Mix
🍌 2 eggs
🍌 1/3 cup oil
🍌 Banana Extract
🍌 1 box of Jello Banana Cream Instant Pudding
🍌 Vanilla Wafers
🍌 2 cups Sweetened Condensed Milk
OPTIONAL:
🍌 Powered sugar
🍌 Cool whip
🍌 Jello Vanilla Instant Pudding
DIRECTIONS:
Cookies:
- Combine 2 eggs, 1/3 cup of oil and 1 tablespoon of banana extract in a bowl and set aside
- Dump bag of cake mix into a large bowl and work in the egg and oil mix. Do not overwork the dough!
- Allow cookie dough to chill in the fridge for 30 minutes.
- Preheat oven to 350°
- Oil up your hands and using an ice cram scooper or a spoon; scoop out equal size amounts of dough, roll them into balls and place on a cookie sheet prepared with parchment paper.
- allow cookies to bake for 10 minutes
Topping:
- *If you think a banana flavored frosting will be too overpowering, opt for a box of vanilla pudding instead*
- Combine 2 cups of sweetened condensed milk with the pudding mix.
- If you like this consistency and sweetness, add to a ziplock bag and let it chill. Once the cookies are done you may cut a tiny piece of a tip of the bag off and use that to drizzle the pudding over the cookies.
- If it is too runny & too sweet, mix in some cool whip to thicken and slightly unsweeten.
- If it is too runny but not sweet enough, add powdered sugar until desired consistency and sweetness is achieved.
- Once frosting is perfected, crush vanilla wafers to sprinkle over said frosting on top of the cookies!
