Healthy Peanut Butter Banana Muffins🍌🥜

I’ve been obsessed with these soft, fluffy, and naturally sweetened muffins lately! I used peanut butter in my husband’s and Sun Butter in mine since I’m allergic to peanuts. Also, they’re super easy to whip up!✨

Here’s what you’ll need:

🥜 1/4 cup coconut oil (or butter)

🍯 3 tbsp maple syrup

🍌 1 cup mashed banana (about 2-3 bananas)

🥜 1/2 cup peanut butter (or Sun Butter or almond butter)

🥛 1/2 cup milk of choice (dairy or non-dairy)

🌿 1 tsp vanilla

🥚 2 eggs

🌾 1 3/4 cup flour if choice (I use gluten free or oat flour)

⚡ 1/2 tsp baking soda

🧂 1/2 tsp salt

How to make them:

1️⃣ Preheat oven to 425°F and grease a muffin tin (or use liners)

2️⃣ In a bowl, mix coconut oil, maple syrup, peanut butter, and mashed bananas until smooth. Whisk in milk, vanilla, and eggs.

3️⃣ Stir in flour, baking soda, and salt until combined. Let the batter rest for 5-10 mins to thicken.

4️⃣ Fill muffin cups. Bake at 425°F for 5 mins, then lower temp to 350°F and bake for 14-17 mins until golden and springy.

5️⃣ Let cool, then enjoy!
