carrot cake with brown butter cream cheese & caramel drizzle 🥕🍰 🐰

Ingredients 🧈🥚

carrot cake

-2 1/2 cups flour

-1 1/2 tsp baking soda

-1 tsp cinnamon

-1/4 tsp clove

-1/4 tsp nutmeg

-1/4 tsp allspice

-1 tsp salt

-1 1/2 cups sugar

-1 cup vegetable oil

-3 eggs

-3 cups shredded carrots

-1/2 cup crushed pineapple

-1/2 cup chopped walnuts

brown butter cream cheese frosting

-1 cup unsalted butter

-16 oz cream cheese

-5 cups powdered sugar

-1/2 tsp vanilla

caramel sauce

-1 cup sugar

-1/2 cup water

-200ml heavy cream

-5 tbsp butter

-1 tsp vanilla

Instructions 📝

Cakes

1. Preheat the oven to 375°F. Grease three 8in cake pans

2. Sift together the flour, spices & salt into a small bowl

3. Mix together sugar & oil. Then add eggs, carrots, pineapple & walnuts

4. Slowly add in flour (do not over mix)

5. Pour batter evenly into pans & bake for 30-35 mins

Frosting

1. Add butter & cream cheese to bowl of a stand mixer fitted with the paddle attachment.

2. Mix on medium speed until completely smooth.

3. Mix in powdered sugar 1 cup at a time, scraping down the sides and bottom of the bowl

4. Mix in vanilla until smooth.

5. If the frosting is too thin, place the bowl in the refrigerator for about 30 minutes to thicken. You can also add a little bit more powdered sugar to make it thicker

Caramel sauce

1. Mix together water & sugar in a heavy bottomed sauce pan.

2. Place on stove on medium heat. When it starts to boil, gently swirl pan around every 30 seconds (do not stir)

3. Once mixture has reached an amber color, take off heat & carefully add in heavy cream. Whisk well.

4. Add in butter & vanilla & whisk until smooth

5. Transfer to heat proof container & let cool completely before using
