-¾ cup (170 g) butter, melted & cooled
-¾ cup (165 g) brown sugar
-½ cup (97 g) granulated sugar
-1½ tsp vanilla extract
-2 large egg yolks
-½ cup + 2 tablespoons (135 ml) pumpkin puree
-¾ tsp pumpkin pie spice
-½ tsp baking powder
-½ tsp baking soda
-¾ tsp salt
-2 cups (285 g) all-purpose flour
-¾ cup (128 g) chocolate chips (for mixing in)
-large marshmallows, cut in half
-chocolate chips (for topping)
-graham crackers, roughly crushed + extras for topping
Instructions 📝
1. Preheat oven to 350°F. Line an 8x8-inch pan with parchment paper.
2. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
3. Mix in the egg yolks, vanilla, and pumpkin puree. (You may want to blot your pumpkin with a paper towel to remove some of the moisture if you want your bars to be more gooey)
4. Add in the pumpkin spice, baking powder, baking soda, and salt & stir.
5. Fold the flour ingredients into the pumpkin mixture until just combined. Stir in the chocolate chips and crushed graham crackers.
6. Spread 3/4 of the dough into the pan, smoothing it into an even layer.
7. Arrange the marshmallows over the dough & sprinkle with extra chocolate chips and graham cracker crumbs.
8. Drop spoonfuls of the remaining dough over the top
9. Bake 28–32 minutes, until golden on top and the marshmallows are puffed and toasty.
