Gingerbread cake
-3 cups flour
-1 tsp baking soda -1 tsp salt
-2 tbsp ground ginger -2 tsp ground cinnamon -1/2 tsp ground allspice -1/2 tsp ground cloves
-1 cup unsalted butter, room temp -1 cup brown sugar
-1 cup granulated sugar
-1 cup molasses -4 eggs
-1 cup buttermilk
-1.5 tbsp vanilla
Glaze
-2 cups powdered sugar
-2 tbsp maple syrup
-1 tbsp milk
*sugared cranberries & rosemary for decoration
Instructions 📝
1. Preheat oven to 350 F. Prep your Bundt pan with a full coat of butter & flour, especially the center column
2. In a bowl, cream the butter & both sugars for about 2 minutes
3. Mix in the molasses until smooth, then add the eggs one at a time, mixing just until each one is combined
4. Whisk the dry ingredients together in a separate bowl so the spices & baking soda are evenly distributed.
5. Add the dry ingredients & the buttermilk to the batter alternating in batches, mixing on low speed only until everything comes together.
6. Spoon the batter into the Bundt pan in layers
7. Bake for 50-60 minutes, or until a toothpick comes out clean.
8. Cool the cake in the pan for 10 minutes, then flip it out while it’s still warm & drizzle with your glaze.
