-1/2 cup heavy cream

1. Mix crushed cookies and melted butter. Press into the pan and chill in freezer while making the filling

2. Beat cream cheese, powdered sugar & vanilla until smooth

3. Add melted chocolate and mix until fully combined

4. In a separate bowl, beat heavy cream until stiff peaks form & fold into cheesecake mixture

5. Pour filling on top of crust & refrigerate for at least 6 hours

Ganache

1. Heat cream just until it starts to boil

2. Pour over chocolate & let sit for 1-2 mins then mix until smooth. Add in mint extract to taste
