PIZZELLE SHELL
225g AP flour
1/2 Tbsp baking powder
3 large eggs
150g sugar
88mL canola oil
1/2 Tbsp Amoretti Birthday Cake Natural Flavoring
Sift flour and baking powder together. Set aside. In a mixer fitted with a paddle attachment, beat eggs at med speed. Slowly add sugar, canola oil, and birthday cake flavoring and mix until combined. Continue to mix, add flour mixture until combined and smooth. Preheat the pizzelle iron. Transfer batter into a large piping bag and cut a hole in the tip. When the iron is preheated, pipe a dollop of dough into the center of each mold. Close and cook for 15-45 seconds (time varies based on iron). Remove the cookies using a wooden chopstick and drape over a hanger to cool. For a more defined shell, push the edges towards each other while cooling, leaving a small gap. Repeat for remaining dough. Insert a piece of crumbled parchment in each cooled shell and bake at 220F for 30 min.
ICE CREAM
2 cups heavy whipping cream
1-14oz can sweetened condensed milk
1 Tbsp Amoretti Birthday Cake Natural Flavoring
In a stand mixer fitted with the whisk attachment, whip the cream to stiff peaks. Add condensed milk, vanilla and flavoring. Whip until well combined. Transfer to a piping bag, and freeze for 1-1.5 hrs. Arrange the shells facing up. Remove the ice cream from the freezer. Fill the shells with ice cream. Freeze for 6hr.
TEMPERED CHOCOLATE
Fill a small bowl with semi-sweet chocolate chips. Heat at 50% power for 1 min intervals until the chocolate is 105-115F. Stir in additional chips until temp drops to 85-90F. Transfer to a piping bag fitted with tip 402. Remove tacos from freezer and pipe chocolate across the tops. Freeze to set. Enjoy!
