Aroace Banana Pizzelle 🧡💛🤍🩵💙
INGREDIENTS
225 g all purpose flour
1/2 tbsp baking powder
3 large eggs
150 g sugar
88 mL canola oil
2 tsp banana extract
1/8 tsp cinnamon
Sift flour and baking powder together. Set aside.
In the bowl of a stand mixer fitted with a paddle attachment, beat the eggs at medium speed. Slowly add sugar (about 1 Tbsp at a time, making sure it is fully incorporated before adding more.) Slowly add canola oil, extract, and cinnamon and let mix until combined. Continue to mix and slowly add the sifted flour mixture until ingredients are combined and mixture is smooth.
Preheat the pizzelle iron. Transfer batter into a large piping bag and cut a hole in the tip. When the iron is finished preheating, pipe a dollop of dough into the center of each cookie mold. Close the iron and allow to cook for 15-30 seconds.
Remove the cookies from the iron using a wooden chopstick and place on a wire rack to cool completely. Repeat this process until all dough is used. Once your cookies have cooled, lay them on a cookie sheet and bake at 220F for 30 min.
I absolutely adore pizzelles! There's something so comforting and elegant about these thin, crisp (or sometimes soft, depending on your preference!) Italian waffle cookies. While the classic anise or vanilla flavors hold a special place in my heart, I'm always looking for ways to put a unique spin on traditional recipes. That's how I landed on this banana pizzelle recipe, and honestly, it's become a new favorite! The subtle banana extract gives them a warm, fruity sweetness that’s just divine, making them perfect for a cozy afternoon treat or to surprise guests with something a little different. Making pizzelles might seem intimidating if you've never used a pizzelle iron before, but trust me, it's quite straightforward once you get the hang of it. My biggest tip? Invest in a good quality pizzelle iron – electric ones are super convenient and maintain consistent heat. Before you even start mixing, make sure your iron is fully preheated. This is crucial for preventing sticking and ensuring those beautiful, lacy patterns come out perfectly. When you're ready to pipe, try to be consistent with the amount of batter you use for each cookie. A small dollop right in the center usually does the trick. Don't worry if your first few aren't perfect; it takes a little practice to find your rhythm! Once they come off the iron, you have a choice to make about texture. If you prefer a softer, chewier cookie, like the ones in this recipe that get a short bake after cooling, make sure to cool them completely on a wire rack first. This final bake at a low temperature (220F for 30 minutes) really helps to set the banana flavor and achieve that lovely, tender consistency. If you want them crispier right off the iron, you might need to cook them a few seconds longer in the pizzelle maker and then let them cool quickly. For those who are also searching for a 'classic pizzelle recipe,' it's incredibly easy to adapt this one! Simply swap out the banana extract for 2 teaspoons of pure vanilla extract for a sweet, traditional flavor, or use 1 teaspoon of anise extract if you love that distinct licorice-like taste that’s so popular in Italy. You could even try almond extract for a delicate nutty note. The beauty of this base recipe is its versatility, allowing you to customize flavors to your heart's content. These banana pizzelles are fantastic on their own, perhaps with a dusting of powdered sugar. But don't hesitate to get creative! I love dipping them in melted dark chocolate for an extra indulgence, or even using them to make mini ice cream sandwiches – the banana flavor pairs wonderfully with vanilla or chocolate ice cream. They also make a surprisingly delicious topping crushed over yogurt or fruit salad. To keep your freshly baked pizzelles at their best, store them in an airtight container at room temperature. They usually stay fresh and delicious for about a week, though in my house, they rarely last that long!
