Ingredients:
152g vegetable shortening
150g sugar
1 tsp raspberry extract
1 tap chocolate extract
1 large egg
2 1/2 Tbsp milk
1 tsp baking powder
½ tsp salt
288g all-purpose flour
Preheat oven to 350F and line a baking sheet with parchment.
Using a stand mixer fitted with a paddle attachment beat shortening, sugar, extracts, egg, milk, baking powder, and salt for about 3 min. Add the flour and mix until a dough forms.
Refrigerate the dough for about 30 minutes. Divide the dough into equal portions and dye each a different color. Flatten each portion into approximately a 3” x 3” square. Wrap each shaped portion in plastic wrap and place in the fridge for about 30min.
Stack the dough according to flag order. Gently press the dough together and shape into a log. Freeze for approximately 15-20 minutes.
Cut the block into about 8-10 cookies Transfer the cookies to the sheet and bake for 12-13 min.
