Baking sourdough bread at home can be a rewarding hobby, especially when you try your hand at making mini loaves. One of my favorite aspects of this process is the mixing stage, which is critical for developing gluten and ensuring a beautiful crumb texture. When making mini sourdough loaves, it’s important to measure your ingredients precisely and mix them thoroughly to allow the flour to hydrate properly. I usually start by combining sourdough starter, water, and flour until there are no dry spots, then let the dough rest for about 30 minutes — this autolyse step helps improve extensibility. Following that, I add salt and continue mixing by hand or with a dough hook. The dough should feel elastic and slightly sticky but manageable. Overmixing can be a problem, so I listen closely to the texture cues. Dividing the mixture into four portions creates perfect-sized mini loaves, which are excellent for sharing or portion control. These loaves bake faster, allowing for a shorter baking time, but it’s essential to monitor their crust color and internal temperature for perfect doneness. Experimenting with toppings or adding ingredients like seeds or herbs can elevate your loaves into sweet or savory delights. Don’t be discouraged if your first batch isn’t perfect — sourdough baking is an art that improves with practice and attention to the mixing and fermentation stages.
