1 medium eggplant, cubed

18 oz can no-salt-added tomato sauce
1 Tbsp parsley, chopped
1 tsp dried thyme
2 tsp red wine vinegar
1 tsp sugar

2 Tbsp olive oil
🔥 Directions:
Preheat oven to 375°F.
Mix all veggies and garlic in a bowl.
