balanced dinner idea: power bowl 🥬🍠

Eating more balanced meals in 2025!

Ingredients:

Jasmine rice

Kale

Sweet potatoes

Roasted bell peppers

Jerk chickpeas

red beans

(Meat is optional)

I sautéed the kale and squeezed lemon juice over it. Roasted the sweet potatoes on 400 degrees for about 15-20 min. For the chickpeas, I tossed them in a jerk seasoning paste (you can find it on the condiments aisle), so they were a lil spicy lol. I made red beans the day before & used the rest of them.
