Waffle Stitch Blanket Eating My Yarn

I started a waffle stitch blanket with this soft wool yarn and it’s honestly devouring my skeins. I’m already on my third 150g skein and the blanket is still tiny (see photo).

I’m seriously considering frogging the whole thing and starting fresh. Moss stitch is calling my name because it seems much more yarn-friendly, but I’d love to hear your opinions. Have you switched patterns mid-project because your yarn wasn’t stretching far enough? Would you stick it out or start over?
