Sauce Base

• Half white onion

• Minced garlic

• Ginger powder

• White pepper

• Italian seasoning

• 1 tbsp tomato paste

• Cherry tomatoes

• 1½ cup full fat coconut milk

• Lime juice

Seasonings

• 2 tbsp paprika

• 2 tsp cayenne pepper

• 2 tsp onion powder

• 1 tbsp chili flakes

• 1-2 tbsp of chicken bouillon

Finish

• 1 cup mozzarella cheese

• Al dente pasta

• Fresh parsley

• Extra cheese for topping

• Cooked steak (to serve)

Instructions

In a pan with oil, sauté half a white onion until softened, then add minced garlic. Season with ginger powder, white pepper, and Italian seasoning and fry briefly. Add tomato paste and stir. Throw in cherry tomatoes, cover and let simmer until softened then mash them down. Squeeze in lime juice and pour in 1½ cups of full fat coconut milk. Add paprika, cayenne pepper, onion powder, chicken powder and chili flakes and stir everything together. Reduce to low heat, add mozzarella cheese and let it melt in. Toss in your al dente pasta and mix until fully coated. Add little pasta water and top with fresh parsley and extra cheese. Serve alongside your cooked steak or whatever..
