PUMPKIN CREAM CHEESE MUFFINS🎃

These honestly came out sooo good🤩

they are less than 1/4 the calories & 28g LESS sugar than the Starbucks muffins!!

they’re a great alternative if you have a big sweet tooth like me & want to enjoy these treats daily.

Ingredients:

1 cup pure pumpkin puree

1scoop vanilla protein powder

1/2 cup oats (blended into flour)

1/4 cup regular flour

1 tsp cinnamon/pumpkin pie spice

1 tsp baking powder

1 tsp baking soda

2 eggs

1/4 whipped creme cheese

1/4 cup maple syrup

2 tbsp monk fruit or substitute (optional but will make it sweeter)

1 tsp vanilla extract

1/4 cup fat free Greek yogurt plain

1/2 tbsp EVOO or coconut oil

dash salt

RECIPE:

•Mix together the pumpkin puree, eggs, maple syrup, sweetener, vanilla extract, Greek yogurt, and evoo.

•Slowly incorporate the 1 scoop vanilla protein powder, oats flour, regular flour, cinnamon or pumpkin pie spice, baking powder, baking soda, and a dash of salt.

Center cream cheese: Mix 1/4 cup whipped cream cheese with maple syrup (or monk fruit sweetener).

•Split mixture into 12 muffins in a muffin tray

•Add a small dollop of cream cheese to the top

•Bake at 400°F for 14 minutes.

Let cool & enjoy all week!!
