Ingredients:

1 onion

4 garlic cloves (can use minched garlic 2-3 spoonfuls)

1 jalapeรฑo (optional if you want spice)

4-5 boneless Chicken breast

Seasonings measured to your taste of: paprika, cumin, salt, pepper, and garlic powder. ipes

1can fire roasted tomatoes de

32oz chicken broth

2 cans black beans

1 can corn

Optional for toppings:

chives

Avocado

Sour cream

Tortilla strips

Cilantro

Cheese

To make:

- Chop up 1 big onion & add to a pot. (Usually I'll do a yellow onion but I only had red!) Cook for ~3-5 min in some olive oil.

- Chop up garlic cloves & 1 jalapeรฑo and toss them in and let sautรฉe.

- Then, add in your rinsed/trimmed chicken breasts.

- Add in seasonings.

- Add in 1 large can of fire roasted crushed tomatoes.

- Add 1 carton of chicken broth & cover. Bring to a boil for 15 minutes.

- After 15 min, add 2 cans of drained black beans & a package of corn. Boil another 10 min.

- Take your chicken out and shred in a bowl. Put it back in.

- Top with whatever you like.
