I had always been wary of durian, but the creamy, bittersweet richness of this particular variety transformed my perspective entirely. It’s not just food; it’s an experience of bold flavors that define Singapore’s culinary identity. Another highlight was the Peking duck at TungLok, where the chef’s tableside carving added a theatrical and interactive element to dining. Watching the expert knife skills while enjoying the crispy skin and tender meat made it a meal to remember. For a comforting and authentic dish, the claypot bak kut teh from Kam Par, a recipe dating back to 1984, delivered deep, herbal flavors that seemed steeped in tradition. This dish warmed me up and gave a glimpse into Singapore’s rich hawker heritage. Lastly, the kai xin chilli crab was a messy delight. The bold chilli sauce, paired with fresh crab, called for wiping fingers and sharing laughs over how deliciously undignified the meal was. These experiences taught me that Singapore eating goes beyond just food—it's about savoring local stories, traditions, and a vibrant food culture that locals cherish.
