30 Minute Healthy Dinner | Chickpea Patties
You NEED to try these chickpea patties. This is my favorite weekday meal! They're delicious served over coconut rice and topped with lemon aioli. I loved this dish so much, not many recipes make it to my 5⭐️ list and this is definitely one of them!
Serves 2:
To make 6 chickpea patties -
1 can chickpeas
1/2 c panko breadcrumbs
3 tbsp cornstarch
1/4 c minced green onion
1/4 c minced bell pepper
1/4 c shredded carrot
1 tbsp nutritional yeas
1 tsp paprika, garlic powder
2 tosp olive oil
2 tbsp chopped cilantro
1/2 tsp salt
1/3 c water
Coconut rice-
1/2 c rice
3/4 c coconut milk
Fresh cilantro
Juice of lime
Lemon aioli-
2 tosp yogurt
1/2 tosp lemon juice
1/8 tsp garlic powder salt and pepper
Start the rice. Mash the chickpeas in a large bowl with a fork or pulse in a food processor until roughly mashed. Add panko breadcrumbs, cornstarch, green onion, bell pepper, carrot, cilantro, salt, garlic powder, paprika, and nutritional yeast to the mashed chickpeas.
Add water and mix until well combined. Use your hands to form the mixture into 6 patties, about 1/2 inch thick.
Pour 1-2 tbsp of oil in a pan over medium heat. Add the patties and cook for 3-4 minutes on each side, or until crispy. Place the cooked patties on a paper towel lined plate to absorb extra oil. Mix the aioli ingredients together while the patties cook. Serve over coconut rice and top with the aioli. I also ate mine with steamed broccoli for extra veg. Hope you love them like I do!!!
**The patties can also be served in a bun or with a salad.
