LOADED COTTAGE PIE CASSEROLE

If shepherd’s pie and a Midwestern casserole had a baby, this would be it. It’s savory, creamy, crunchy, and wildly satisfying.

INGREDIENTS

1 lb ground beef

1 onion, diced

1 cup brown gravy (prepared)

2 bags instant mashed potatoes, prepared

1 can or bag corn (or mixed vegetables)

1 cup shredded cheddar cheese

1 sleeve Ritz crackers, crushed

1 cup French fried onions

Salt and pepper to taste

INSTRUCTIONS

1. Preheat oven to 375°F.

2. In a skillet, cook ground beef and diced onion until browned and softened. Drain excess grease. Season with salt and pepper.

3. Stir in 1 cup brown gravy and let simmer a few minutes until thick.

4. In a greased baking dish, layer in this order:

• Beef and onion with gravy

• Mashed potatoes (first layer)

• Corn or mixed vegetables

• Mashed potatoes (second layer)

• A drizzle of extra gravy

• Shredded cheddar cheese

• Crushed Ritz crackers

• French fried onions

5. Bake uncovered for 25–30 minutes until hot and bubbly and the top is golden.

6. Let sit 5–10 minutes before serving so it holds together when scooped.

TIPS

Add a little garlic powder or Worcestershire to the beef for extra flavor.

Broil the last 2–3 minutes if you want the topping extra crispy.
