Scrambled Eggs ๐ณ
For breakfast I made scrambled eggs with sausage, spinach and topped with salsa! ๐ฅ Most of these meals Iโll be cooking for 3 people so adjust the ingredient amounts if your feeding more or less!!
Ingredients:
โจ 9 Eggs
โจ 4 Sausage Patties ( diced )
โจ 2 Hand fulls of Spinach
โจ Salsa ( optional )
๐ฅ In a pan fully cook the diced sausage patties & add in spinach!
๐ฅ In a separate pan scramble eggs as usual!
๐ฅ Add sausage & spinach into the eggs and mix!! ( I like to turn the heat off before adding my spinach so itโll still have a type of crunch to it! )
๐ฅ Top with 1-2 Tbl of salsa!!

I absolutely adore this scrambled eggs with sausage, spinach, and salsa recipe for a truly satisfying and healthy breakfast! Itโs become one of my favorite 'Breakfast ideas' because itโs packed with flavor, nutrients, and comes together so quickly, even on the busiest mornings. Itโs definitely a step above plain scrambled eggs, turning into a delicious 'SCRAMBLED EGGS W/ Sausage, spinach & salsa' experience. Beyond just tasting great, this dish is a nutritional powerhouse. Eggs provide essential protein to keep you feeling full and energized, while fresh spinach adds a fantastic dose of vitamins and fiber. Combining these with savory sausage makes for a complete meal that truly fuels your day. I find itโs the perfect way to kickstart my metabolism and avoid those mid-morning slumps. One of the best things about this recipe is how easily you can customize it to your liking, especially if you're looking for 'scrambled eggs with sausage and vegetables' or a specific 'scrambled eggs spinach tomatoes healthy breakfast plate.' I often throw in other veggies I have on hand! Diced bell peppers, sautรฉed mushrooms, or even a handful of chopped onions can add even more texture and nutrients. For that popular 'scrambled eggs spinach tomatoes' combo, Iโd suggest adding some fresh diced tomatoes right at the end, or even sun-dried tomatoes for a richer flavor. They really brighten up the dish! Another great addition is a sprinkle of your favorite cheese, like cheddar or feta, which melts beautifully into the warm eggs. To get that perfect 'spinach egg scramble skillet', the key is not to overcook your eggs. I usually cook my sausage and spinach in one pan, then quickly scramble the eggs in a separate non-stick skillet. This ensures the eggs stay nice and fluffy while the other ingredients are perfectly cooked. Once the eggs are almost set but still a little moist, I gently fold in the sausage and spinach mixture. This method helps keep the spinach from getting too wilted, retaining a bit of its fresh crunch, just like in the original recipe's tip! Thinking about how to serve this, it's incredibly versatile. While itโs fantastic as a 'scrambled eggs with spinach breakfast bowl' on its own, I sometimes turn it into a more elaborate 'healthy breakfast plate.' I love serving it with half an avocado, a slice of whole-wheat toast, or a side of fresh fruit. It truly makes for a cafรฉ-worthy breakfast right at home. For those busy weeks, you can even do a bit of meal prep. Cook your sausage and chop your spinach ahead of time. Store them in the fridge, and in the morning, all you have to do is quickly scramble your eggs and combine everything. Itโs also super easy to adjust the ingredient amounts, whether youโre cooking for just yourself or a whole family. That's why I find this 'SCRAMBLED EGGS W/ Sausage, spinach & salsa' recipe so practical and delicious โ it fits any occasion and any craving!
