Pineapple Upside-Down CupCakes 🍍🧁

I made these for our snack last night && they didn’t even make it 24 hours…. They were too good, especially while they’re still warm 🤤 This recipe made 12 cupcakes && a small loaf cake!

Ingredients:

✨ Melted Butter

✨ Brown Sugar

✨ Pineapple Chunks

✨ Maraschino Cherries

✨ Vanilla Cake Mix

✨ 1/3 cup Vegetable Oil

✨ 3 Eggs

✨ 1 cup Pineapple Juice

💥 Preheat oven to 350°

💥 Spoon in 1 tsp of melted butter & 1 tbl of brown sugar into each muffin cup

💥 Cup pineapple chucks in 1/2 then put 4 in each muffin cup along with 1 cherry in the middle!

💥 Rough chop the remaining pineapple and set aside

💥 In a stand mixer, mix together cake mix, vegetable oil, eggs & pineapple juice

💥 Fold in 3 Tbl of the crushed pineapples that you had set aside

💥 Scoop batter into each muffin cup, don’t overfill!

💥 Bake for 20-25 minutes

💥 Let cool about 5 minutes before flipping over ( you may want to use a butter knife to release cakes from the cups so the don’t break )
