The original idea of ground chicken stuffed with ricotta is absolutely delicious – it makes them so tender and creamy inside, especially when topped with a rich marinara sauce and served over a bed of spaghetti. It’s truly a classic comfort meal. But recently, I decided to put a little twist on my 'Stuffed Meatballs' for our weekly 'Pasta Night', inspired by wanting to try something with a bolder flavor. The process is pretty similar to making any stuffed meatball. You start with lean ground chicken, which keeps them light. For the blue cheese stuffing, I usually crumble about 1/4 to 1/2 cup of a good quality blue cheese (Gorgonzola is fantastic here, or even a milder Danish blue if you’re just starting out with blue cheese) and mix it with a tablespoon of finely chopped chives or parsley, maybe a tiny bit of breadcrumb if the cheese is very moist, and a pinch of black pepper. The trick is to not overmix the chicken, so it stays tender. When you’re forming the meatballs, take a small amount of the seasoned ground chicken, flatten it into a disc in your palm, place a little dollop of the blue cheese mixture in the center, and then carefully wrap the chicken around it, sealing it completely. Aim for golf-ball sized meatballs – not too big, not too small. I find baking these blue cheese stuffed chicken meatballs works beautifully to keep the cheese from leaking out too much. Just a quick sear in a hot pan first to get a nice crust, then finish them in the oven at around 375°F (190°C) for about 15-20 minutes, or until cooked through. You can even simmer them directly in your marinara sauce after searing, which infuses the sauce with even more flavor. Serving them up on spaghetti noodles is non-negotiable for me! The hearty pasta provides the perfect base, and the marinara sauce complements the rich, tangy blue cheese so well. Sometimes, I sprinkle a little extra fresh basil or a grating of Parmesan on top for garnish. It's truly a gourmet meal that feels super special but is surprisingly easy to pull off on a weeknight.
