Okay, so you've seen my viral recipe, but let's dive a little deeper into why spaghetti squash is such a game-changer, especially for those of us looking for healthier pasta alternatives! I absolutely love it because it's naturally low in carbs and calories, but still super satisfying. Plus, when cooked right, those beautiful strands really do mimic spaghetti, making it feel like you're not missing out on anything. Want to get those perfect, long strands every time? Here’s my little secret for baking the squash: don't overcook it! I cut mine in half, scoop out the seeds, drizzle with olive oil, and season generously (black pepper, garlic powder, paprika are staples for me). Then, I bake it cut-side down at 375°F for about 40-50 minutes, depending on its size. You want it tender, but not mushy. Once it's cool enough to handle, use a fork to scrape out the strands – they'll come right out! Another tip: sometimes I'll even bake it cut-side up with a little water in the baking dish to steam it, which can also help with tenderness. Now, about those "fixings"! My recipe uses ground beef, which is a classic, but don't be afraid to get creative. I've tried this with ground turkey or even finely diced chicken, and it's equally delicious if you're looking to switch things up. For a vegetarian twist, you could load it up with extra veggies like mushrooms, bell peppers, or even some roasted zucchini. And speaking of veggies, that bag of spinach wilts down so nicely and adds a great touch of green and nutrients. I sometimes throw in some finely chopped shallots with the ground meat for an extra layer of savory goodness, especially if I have some on hand. The cheese situation is also super flexible. While my recipe calls for Boysin cheese as a key ingredient (it adds such a creamy, unique flavor!), if you can't find it, you can totally substitute with other creamy spreadable cheeses. Think Boursin garlic & herb, or even a good quality cream cheese mixed with some herbs. Just make sure it’s something that melts down and integrates well with the heavy whipping cream to create that luscious sauce. Top it all off with mozzarella and Parmesan, and you're in cheesy heaven! This dish is fantastic for meal prep too. You can bake the squash ahead of time and store the strands, then whip up the meat mixture and combine when you're ready. It reheats beautifully and the flavors only get better the next day. So, whether you're looking for a healthier alternative to pasta night or just a comforting, cheesy bake, this viral spaghetti squash recipe is a winner. Let me know if you try any variations!
Thank you
