So easy to make! 📝⬇️
Ingredients:
16oz of farfalle, or pasta of choice
24oz Rao's Marinara sauce
½ cup cauliflower heads, roughly chopped
½ cup zucchini, chopped ½ cup carrot, chopped ½ cup onion, chopped
½ cup bell pepper, chopped
1 head of garlic
1 Tbs olive oil
1 Tbs Italian seasoning
1 15.5oz can of white beans
Parsley, to garnish
Instructions:
Preheat oven to 425°F. While the oven is preheating, boil a medium pot of water over high-heat.
Add veggies to a large sheet pan lined with parchment, along with a head of garlic. Drizzle with olive oil, and season with Italian seasoning. Roast for 30 minutes or until veggies become tender.
While veggies roast, cook your choice of pasta. Once finished, add into a 9x13 baking dish.
Once veggies are roasted, let cool slightly. Gently squeeze the head garlic, squeezing the roasted cloves into a blender.
Add the rest of the veggies, along with a jar of pasta sauce and a can of white beans to the blender. Blend until smooth.
Pour over pasta in a 9x13 baking dish. Mix and enjoy!! 💁🏽♀️
