Spicy Honey Garlic Chicken Meatballs

Sweet and Spicy Chicken Meatballs with Honey Garlic Glaze

Ingredients:

1 lb ground chicken

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon soy sauce

1 tablespoon olive oil

1 tablespoon cornstarch

Salt and pepper to taste

1 tablespoon olive oil (for cooking)

For the Sauce:

3 tablespoons honey

2 tablespoons soy sauce

1 tablespoon sriracha sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon garlic powder

1/2 teaspoon red pepper flakes

Directions:

In a large bowl, combine the ground chicken, breadcrumbs, Parmesan, egg, minced garlic, grated ginger, soy sauce, olive oil, cornstarch, salt, and pepper. Mix until fully combined.

Shape the mixture into small meatballs, about 1 inch in diameter.

Heat the olive oil in a large skillet over medium heat. Cook the meatballs in batches, turning occasionally, until golden brown and cooked through (about 8-10 minutes).

While the meatballs are cooking, make the sauce: In a small bowl, whisk together honey, soy sauce, sriracha, rice vinegar, sesame oil, garlic powder, and red pepper flakes.

Once the meatballs are cooked, pour the sauce over the meatballs and toss gently to coat. Simmer for 2-3 minutes to allow the sauce to thicken.

Remove from heat and serve hot, garnished with chopped green onions and sesame seeds if desired.

... Read moreSo you've mastered these incredible Spicy Honey Garlic Chicken Meatballs? Amazing! But let's talk about how to really elevate them, whether it's for a busy weeknight or a special meal. I've got some extra tips and tricks I've picked up along the way that I think you'll love! Expand Your Serving Options Beyond Just Rice One of my favorite ways to enjoy these is, of course, over a fluffy bed of jasmine or basmati rice, just like in some of my photos! The rice perfectly soaks up all that delicious sticky sauce. But don't stop there! I sometimes serve them with some steamed broccoli or sautéed green beans for a complete meal. For a fun twist, try them in crisp lettuce wraps with a sprinkle of crushed peanuts for an extra crunch. Or, if you're looking for something heartier, toss them with some quick-cook noodles for a 'meatball stir-fry' vibe. If you're feeling ambitious, you could even make a 'meatball rice bake' by layering cooked meatballs, rice, and a little extra sauce in a casserole dish and baking until bubbly – talk about comfort food! Tips for Mastering That Perfect Honey Garlic Glaze That glossy, sweet, and spicy glaze is truly the star, isn't it? To make sure yours is always perfect, here are a few things I've learned: If you like it extra thick and coating, you can add a tiny cornstarch slurry (1 tsp cornstarch mixed with 1 tsp cold water) to the simmering sauce at the end. Want more heat? Don't be shy with the sriracha or red pepper flakes! For a milder version, just reduce them. And always taste and adjust the honey and soy sauce to balance the sweet and savory to your liking. This is your kitchen, after all! Ingredient Insights & Smart Swaps Let's talk garlic for a sec! The recipe calls for minced garlic, and for good reason – fresh garlic gives the best flavor. If you're ever wondering about conversions, generally, 3 cloves of minced garlic is roughly equivalent to about 1 tablespoon. But honestly, I often just eyeball it! If you don't have fresh ginger, a good quality ground ginger works too, just use about 1/2 teaspoon for every tablespoon of fresh. And for the chicken, feel free to experiment with ground turkey for a slightly leaner option, though ground chicken really shines here. Convenient Cooking Methods & Store-Bought Hacks Life gets busy, and sometimes we need shortcuts! Good news: this recipe is super adaptable. Instant Pot/Slow Cooker: You can brown your meatballs first, then transfer them to an Instant Pot with the sauce ingredients and cook on high pressure for about 5 minutes, followed by a natural release. Or, for a slow cooker, cook on low for 2-3 hours after browning. This is a lifesaver for busy days! Oven Baked: If you prefer baking, you can cook the meatballs on a parchment-lined baking sheet at 400°F (200°C) for 15-20 minutes until cooked through, then toss them with the prepared sauce in a skillet. This gives a slightly firmer texture. Store-Bought Meatballs: Don't have time to make your own from scratch? No judgment here! This sauce works wonders on frozen, pre-cooked chicken meatballs (like those you might find at Trader Joe's or Costco). Just cook them according to package directions, then toss them in your homemade honey garlic sauce. It’s a delicious hack for an even quicker meal! These meatballs are fantastic for meal prepping! I often make a double batch and portion them out with rice and veggies for lunches throughout the week. They reheat beautifully in the microwave or on the stovetop, making healthy eating so much easier.
