Idk about you, but I am all about making my own food these days. All the labels saying “bioengineering ingredients” has me feeling the ick. Here is my favorite homemade hamburger bun recipe!

Instructions

1. Activate the yeast (if needed):

•If using active dry yeast, mix it with the warm water and honey; let it sit 5–10 minutes until foamy.

•If using instant yeast, skip this step and add it straight to the flour.

2. Make the dough:

•In a large bowl, whisk together the flours, yeast, and salt.

•Add the egg, yogurt, honey (if not used earlier), oil, and warm water.

•Stir until a sticky dough forms.

3. Knead:

•Turn the dough onto a floured surface and knead for about 8–10 minutes until smooth and elastic.

•Add small amounts of flour as needed (it should be soft but not sticky).

4. First rise:

•Place the dough in a lightly oiled bowl, cover, and let it rise in a warm spot for about 1 hour, or until doubled in size.

5. Shape:

•Punch down the dough and divide into 4 equal pieces.

•Shape each into a smooth ball, then flatten slightly into a bun shape (~3.5–4” wide).

•Place on a parchment-lined baking sheet.

6. Second rise:

•Cover and let rise another 30–40 minutes, until puffy.

7. Bake:

•Preheat oven to 375°F (190°C).

•Brush tops with a little beaten egg or milk (optional) and sprinkle with sesame seeds.

•Bake for 14–16 minutes, until golden brown.

8. Cool:

•Let them cool on a wire rack before slicing.

When creating honey wheat buns, using whole wheat flour not only adds a nutty flavor but also increases the nutritional value compared to white flour. The inclusion of honey serves a dual purpose—it offers natural sweetness and acts as food for the yeast, helping the dough rise beautifully. For the best results, using the right type of yeast is essential. Active dry yeast requires activation by mixing with warm water and honey to become foamy, indicating that the yeast is alive and ready to work its magic in the dough. Instant yeast does not need this activation step and can be added directly to the flour mixture, speeding up the preparation. The dough’s texture is key—kneading properly for 8 to 10 minutes develops gluten, which gives buns a soft yet elastic crumb. Avoid adding too much flour as it can make the buns dense. The two rise periods (first and second rise) allow the dough to develop flavor and achieve the perfect puffiness before baking. Brushing buns with egg wash or milk before baking not only gives them a golden, shiny crust but also helps sesame seeds adhere better, adding to the buns’ visual appeal and texture. Cooling the buns on a wire rack is important to prevent sogginess at the bottom and allows the buns to finish baking from residual heat, resulting in a perfect crumb inside. These homemade honey wheat buns are versatile. They’re perfect not just for hamburgers but also as sandwich buns or even for breakfast with butter and jam. Making your own buns at home means you control the ingredients, avoiding bioengineering and preservatives often found in store-bought breads, supporting a cleaner, healthier lifestyle.
