Aldi pork chili -3 ingredients and so easy!

I did not intend to post this today. I had a cute cat photo to share. But I had soaked some red pinto beans overnight to make taco soup - realized I had no ground beef - then decided not to venture out.

But this is so dang good, I had to post. I hope other #aldifans see this.

I did have this @Aldi pork shoulder that was pre seasoned. So I defrosted it all morning, threw it in the #instantpot to slow cook all afternoon, then threw in a small can of Aldi tomato sauce, about 16 ounces of water, then rinsed and dropped in two pounds of beans. Slapped the lid back on, set the pressure cooker function to 35 minutes and popped some cornbread in the oven while I waited.

Kiddo came in and immediately asked what smelled so good.

No spices needed, no extra broth, no onions - just the pork, beans and a little can of tomato sauce. Doesn’t even need salt.

Y’all gotta try this. I’ll try to take an aesthetic photo when my hub gets home and I fix his bowl. lol!

... Read moreOkay, so I had to share more about my Aldi pork chili revelation because seriously, it's a game-changer for busy nights! When I first discovered Aldi's pre-seasoned pork shoulder – like that Carnitas Seasoned Boneless Pork Shoulder Roast I used – I knew it was going to be a lifesaver. But let's talk about the beans, because finding the right 'Aldi chili beans' is a query I totally get! Aldi has a fantastic selection of pantry staples that are perfect for chili. For this specific recipe, I used red pinto beans, which are classic for a reason – they soak up all that delicious pork flavor. But don't feel limited! If you're looking for a richer, darker chili, Aldi's canned kidney beans or even black beans would be amazing additions, or you could do a mix. I always keep a few cans of their organic beans on hand; they're super affordable and just as good as the pricier brands. If you're feeling ambitious and have time, their dried pinto beans are incredibly budget-friendly. Just remember to soak them overnight like I did, or if you're in a pinch, the quick-soak method works too (boil for a few minutes, then let stand for an hour). And that 'Carnitas Seasoned Boneless Pork Shoulder Roast'? It's a hero ingredient! While it was perfect for my chili, I've also shredded it for tacos, sliders, or even just served it over rice with a side of steamed veggies. The seasoning is so good, you barely need to do anything else. It saves so much time compared to seasoning a plain pork shoulder yourself. This really speaks to the "Aldi pork and beans" search intent – showing how these specific ingredients can be versatile. To make your chili even more personal, consider some simple additions. While my 3-ingredient version is perfect in its simplicity, sometimes I'll toss in a diced onion (Aldi onions are always a great deal!) with the pork in the Instant Pot for extra flavor, or a bell pepper if I have one lying around. A pinch of cumin or smoked paprika can deepen the flavor profile, but honestly, it's not strictly necessary thanks to the pre-seasoned pork. For a bit of heat, a dash of Aldi's red pepper flakes or a canned chipotle in adobo (just one, minced!) would be fantastic. The best part? This entire meal, from the pork to the beans to the tomato sauce, is incredibly budget-friendly thanks to Aldi's amazing prices. It truly makes a hearty, satisfying dinner without breaking the bank. It's realistic, delicious, and uses ingredients you can easily find on your next Aldi run. Seriously, give it a try – your taste buds (and your wallet!) will thank you!
