Cream Cheese Filled Strawberry Rhubarb Muffins

3/4 C Splenda

1/2 C Butter, Soften

1 Egg

1 tsp Vanilla

2C Flour

2 tsp Baking Powder

1/2 tsp Salt

3/4 C Oat Milk plus 4Tbsp if needed

3/4 C Chopped Strawberries

3/4 C Diced Rhubarb

1 8oz Package Cream Cheese Softened

1 Family Size Box Sugar Free Strawberry Jello

Preheat oven to 400*

In a small bowl mix together the cream cheese and jello packet. Divide in half. To one half add a few diced strawberries and set aside. The half you that has no strawberries, put into a small ziplock.

Cream sugar and softened butter. Add egg and vanilla.

In a separate bowl sift flour, baking powder and salt.

Then slowly alternate the flour mix and milk if batter is to thick add in 1 Tablespoon of milk at a time. once all is combine, stir in strawberries and rhubarb.

Put liners in Muffin Tin. Only fill 1/4 full, take the ziplock bag and cut off one corner and put a little bit on top of each then top with remaining muffin mix.

Bake for 25-28 minutes or until golden

With remaining cream cheese mix frost muffins.

This is a diabetic friendly recipe, however this can be made with regular ingredients
