Beefy Stuffed Shells w/ Extra Sauce+Basil+Parsley
Craving something cozy but not overly cheesy? This one’s for you. I loaded these jumbo shells with seasoned ground beef, just a touch of ricotta, and drowned them (lovingly) in a rich, onion-forward marinara. Finished with fresh basil + parsley for that herby pop.
What I used:
• Jumbo shells
• 1½ lbs ground beef
• ¼–½ cup chopped onion (sautéed in the sauce)
• 1 tbsp minced garlic in water
• ¾ cup ricotta
• ½ cup mozzarella (in the filling)
• 1 cup mozzarella (on top)
• ¼ cup Parmesan
• 1 egg (optional)
• 2 jars marinara sauce
• Italian seasoning, oregano, rosemary
• Garlic + onion powder, salt, pepper
• Fresh basil & parsley (garnish!)
What I did:
Boiled the shells, browned the beef, then mixed it with the cheeses + dried herbs. For the sauce, I caramelized onion and garlic, then stirred in marinara + seasoning and let it simmer. Stuffed the shells, poured on the sauce (heavy-handed, as always), topped with cheese, and baked till golden + bubbly. That final sprinkle of basil and parsley? Chef’s kiss.
Final result: rich, herby, saucy, and meat-forward—aka everything I wanted.
