Potato taquitos / Taquitos de papas
Boil potatoes once fork tender place in bowl. Add salt and cheese (Mexican blend) to potatoes. Mash until potatoes are smooth.
Heat tortillas on skillet until soft. This makes them manageable. Add potato mix to them and roll.
Fry in hot oil until golden brown. Once done top with toppings of your choosing. I added sour cream, lettuce, salsa and fresh cheese to mine.
Hierva las papas una vez tiernas, colóquelas en un tazón. Añada sal y queso (Mexican blend). Macháquelas hasta que estén suaves. Caliente las tortillas en una sartén hasta que estén blandas. Esto las hace manejables. Añada la mezcla de papas y enrolle. Fría en aceite caliente hasta que estén doradas. Una vez listas, cubra con los ingredientes de su elección. Yo les agregué crema agria, lechuga, salsa y queso fresco.
