Chicken Kastu Bowl 💖🍚🍗

🍖 Key Ingredients:

thinly sliced chicken breast

white rice (I get pre-cooked sometimes to make the process even easier)

cabbage (half, shredded)

panko breadcrumbs

eggs (2-3)

all purpose flour

yellow mustard

Sriracha hot sauce

Tonkatsu sauce

🧂 Seasonings:

garlic power

onion powder

paprika

oregano

black pepper

Adobe

** if you don't have adobe, use a generous pinch of salt. DO NOT use both, or your chicken will be super salty.

📋 The Recipe:

1. Add all seasonings listed above, including the Sriracha and Mustard (trust, this helps with binding the seasonings) in a bowl with your chicken. Once mixed, let the blend marinate in the fridge for 20-30 minutes.

2. Put your flour, eggs (beaten), and panko breadcrumbs in 3 separate bowls, in that order (wide and shallow, if you got it. I use those circular cake pans for this). Mix the above seasonings into your flour. Have a place to put your chicken when you're done prepping it, like a big plate or a cutting board.

3. Get your chicken and head to your station! Use the wet hand, dry hand method for this. Coat both sides of your chicken in the flour, then coat them in the eggs, and finish off with your panko. Put aside and continue until all your chicken is properly coated.

4. In a frying pan, pour vegetable oil and set your fire to medium-high. Once heated, fry your chicken for 5-7 minutes, or until golden brown on each sides. (if you have a food thermometer, you'll know its done when the internal temperature reaches 165°F)

5. When your chicken is done frying, sprinkle a pinch of salt on top and let rest for 5-10 minutes.

6. If you don't have microwaveable rice, that's okay! Wash 2 cups of white rice and put it in a pot with 4 cups of water. Bring it to a boil (uncovered), then let it simmer for 20 minutes (covered).

7. If you don't own a mandolin, that's also okay! You can shred cabbage with a knife (might want to look this one up). Season with a pinch of salt for a little pizzazz.

8. Cut your chicken, plate your food and drizzle as much tonkatsu sauce as you like. Optional: sprinkle sesame seeds onto your rice for more pizzazz.
