... Read moreWhen I prepare a dish as rich and flavorful as Jamaican oxtails, I always think about what sides will truly complete the experience. And for me, nothing beats a classic, creamy baked macaroni and cheese. It’s that perfect comforting companion that balances the hearty oxtails beautifully, making every forkful a pure delight. I know many of you, like me, often search for the perfect 'oxtails and mac and cheese' pairing, and I’m excited to share my go-to recipe for the ultimate cheesy side dish that will have everyone asking for seconds. My secret to a truly memorable mac and cheese starts with a homemade cheese sauce. Forget the box mixes; making it from scratch takes just a little extra effort but makes all the difference. I usually go for a blend of sharp cheddar for tang and Monterey Jack for meltiness, but you can experiment with Gruyere or even a touch of smoked gouda for a deeper flavor. The key is to get that perfect balance of creamy texture and rich, cheesy goodness. Here’s how I make my favorite baked macaroni and cheese that perfectly complements those tender oxtails: Ingredients you'll need: 1 pound elbow macaroni (or your favorite pasta shape) 1/2 cup (1 stick) unsalted butter 1/2 cup all-purpose flour 4 cups whole milk (warmed slightly) 1 teaspoon salt 1/2 teaspoon black pepper 1/4 teaspoon cayenne pepper (optional, for a little warmth) 4 cups (about 1 pound) freshly shredded cheese blend (I love a mix of sharp cheddar and Monterey Jack) 1/2 cup Panko breadcrumbs (for that amazing golden-brown crust) 2 tablespoons melted butter (for the breadcrumbs) My simple steps for cheesy perfection: Prep your pasta: First, I cook my macaroni according to package directions, making sure it’s just al dente. You don't want it too soft, as it will continue to cook in the oven. Once done, drain it well and set aside. Make the roux: In a large, heavy-bottomed pot or Dutch oven, I melt the 1/2 cup of unsalted butter over medium heat. Once melted, I whisk in the flour and cook it for about 1-2 minutes, stirring constantly. This creates a roux, which is essential for thickening our sauce and getting rid of that raw flour taste. Build the cheese sauce: Gradually, I whisk in the warmed milk, a little at a time, making sure to incorporate it fully before adding more. I keep whisking until the sauce is smooth and starts to thicken, which usually takes about 5-7 minutes. Then, I remove the pot from the heat and stir in the salt, black pepper, and cayenne if I'm feeling a bit spicy. Add the cheese: Now for the best part! I add about 3 cups of my shredded cheese blend to the sauce, stirring until it's completely melted and smooth. This creates the base of our incredibly creamy cheese sauce. Combine and bake: I add the cooked macaroni to the cheese sauce and stir until every noodle is generously coated. Then, I pour this delicious mixture into a greased 9x13 inch baking dish. For that irresistible crunchy topping, I mix the Panko breadcrumbs with 2 tablespoons of melted butter and sprinkle them evenly over the top, along with the remaining 1 cup of shredded cheese. This ensures a beautiful golden-brown crust when it bakes. Bake to perfection: I pop it into a preheated oven at 375°F (190°C) for about 25-30 minutes, or until it's bubbly around the edges and the top is perfectly golden. I always let it rest for about 10 minutes before serving; this allows the sauce to set slightly and prevents it from being too runny. Serving this baked macaroni and cheese alongside the rich, tender Jamaican oxtails and a side of vibrant mustard greens truly completes the meal. It's a symphony of flavors and textures – the savory, falling-off-the-bone meat, the creamy, cheesy pasta, and the fresh, slightly bitter greens. It’s a meal that feels like a warm hug, perfect for family dinners or a cozy weekend gathering. Trust me, once you make your mac and cheese this way, you'll never go back!
