Loaded Shrimp & Ground Beef Nachos

1 lb (450g) ground beef

1 tbsp olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 tbsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp onion powder

1/2 tsp garlic powder

Salt and black pepper, to taste

1/4 cup (60ml) water

For the Shrimp:

1/2 lb (225g) large shrimp, peeled and deveined

1 tbsp olive oil

1 tsp chili powder

1/2 tsp garlic powder

Salt and black pepper, to taste

For the Nachos:

1 large bag (12 oz/340g) tortilla chips

2 cups (200g) shredded cheddar cheese

1 cup (150g) diced tomatoes

1-2 jalapeños, sliced

1/4 cup (10g) fresh cilantro, chopped

1/2 cup (120ml) sour cream

Instructions

1. Prepare the Ground Beef:Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.

Add the garlic and cook for another minute.

Add the ground beef, breaking it up with a spoon, and cook until browned, about 5-7 minutes.

Stir in the chili powder, cumin, smoked paprika, onion powder, garlic powder, salt, and pepper. Add the water and simmer for 5 minutes, stirring occasionally, until the mixture thickens. Set aside.

2. Cook the Shrimp:In a bowl, toss the shrimp with olive oil, chili powder, garlic powder, salt, and pepper.

Heat a skillet or grill pan over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Set aside.

3. Assemble the Nachos:Preheat your oven to 375°F (190°C).

Spread the tortilla chips in an even layer on a large baking sheet or oven-safe tray.

Spoon the seasoned ground beef evenly over the chips, then sprinkle with 1 1/2 cups of the shredded cheddar cheese.

Bake for 8-10 minutes, or until the cheese is melted and bubbly.

Remove from the oven and top with the cooked shrimp, diced tomatoes, jalapeño slices, and the remaining 1/2 cup of cheddar cheese.

4. Garnish and Serve:Drizzle the nachos with sour cream and sprinkle with fresh cilantro.

Serve immediately while hot, with extra sour cream or salsa on the side if desired.
