Chicken Fajita Casserole

1 cup sour cream

10.5 ounce can low-sodium condensed cream of chicken soup

14.5 ounce can chicken broth

10 ounce can Rotel slightly drained

1 pouch Royal Mexican style rice

8 ounces shredded Mexican cheese blend

3 tablespoons fajita seasoning or taco seasoning

1 cup diced bell pepper

1/2 cup diced onion

4 cups shredded cooked chicken

Garnish options: sliced green onions or green onions

Preheat the oven to 350°F. Grease a 13×9-inch baking dish with nonstick cooking spray or butter.

To a large bowl, whisk together sour cream, cream of chicken soup, and chicken broth.

Add Rotel, fajita rice cups, fajita seasoning, 1 cup of the cheese, bell pepper, and onion. Mix until combined.

Fold in the chicken.

Transfer the mixture to the prepared baking dish. Sprinkle the remaining cheese on top.

Cover tightly with foil. Bake 30 minutes. Uncover and bake another 15-20 minutes, or until the cheese has melted and the rice is tender.

I cooked mine in my Ninja Crispi bake section for 30 minutes stirring often.
