HOMEMADE BIBIBOP BOWL
I love making dishes similar to places I can’t get near my college house. This was so convenient to make in the air fryer and makes big portions to save!
Ingredients:
3 chicken breasts
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon seasoned salt
1 sauce- I cook with Bibibop sriracha yum-yum and top with regular yum-yum
Recipe:
1. Slice the chicken breasts diagonally each direction
2. Mix all seasonings together and season on both sides
3. Place chicken in air fryer and top with a couple spoonfuls of the sauce.
4. Cook in air fryer for 20 mins at 390°F
5. Let chicken rest for about 10 mins
6. Serve with rice, veggies, and drizzle with sauce
Enjoy!

Okay, so you've already mastered the star of the show – that perfectly seasoned, air-fried chicken! But a truly epic homemade Bibibop bowl is all about building it up with delicious and fresh components. Think beyond just 'rice and veggies' to create a bowl that rivals your favorite restaurant, right in your own kitchen! First, let's talk about the foundation: Rice. While simple white rice is always a winner, don't be afraid to experiment! Brown rice adds a nutty flavor and extra fiber, or you could even try making a copycat of Bibibop's famous purple rice by cooking white rice with a tiny amount of purple sweet potato or beet juice for that vibrant hue. Another fantastic option is lemon turmeric rice, which brings a bright, earthy note to your bowl. Just cook your preferred rice, and if you want to elevate it, mix in a dash of rice vinegar and a pinch of salt while it's still warm – it makes a huge difference! Next up: Veggies! This is where you can really make your bowl shine and add tons of nutrients. Based on the delicious look of your bowl with its shredded carrots and chopped green vegetables, you're off to a great start. To expand, consider adding crisp cucumber slices, sweet corn kernels, tender edamame, or even a handful of fresh baby spinach. For a little extra crunch and flavor, quickly sauté some bell peppers or mushrooms. My personal favorites are quick-pickled daikon or cucumber for that tangy kick! Just slice them thin, toss with a little rice vinegar, sugar, and salt, and let them sit for 15-30 minutes. And what about other proteins? While your air fryer chicken is undeniably amazing, you can easily switch things up! For a 'double protein bowl' vibe, add a perfectly fried or soft-boiled egg with a jammy yolk – it ties everything together beautifully. If you're a seafood lover, pan-seared or air-fried salmon makes a fantastic alternative. For plant-based options, seasoned and baked tofu or tempeh cubes are excellent. Finally, let's layer on some extra toppings and sauces. Besides the wonderful creamy orange yum-yum sauce you're already using, a drizzle of traditional gochujang (Korean chili paste) adds a fantastic spicy, savory depth. A simple sesame ginger dressing or a light soy-sesame oil mixture can also elevate the flavors. Don't forget the garnishes: a sprinkle of sesame seeds, fresh green onions, a dollop of kimchi for fermentation goodness, or even some fresh avocado slices for creamy richness. One of the best things about making these bowls at home is the meal prep potential! Since your recipe makes big portions, you can definitely save them. To store, I recommend keeping the hot ingredients (like rice and chicken) separate from the cold, fresh veggies and sauce until you're ready to eat. This keeps everything fresh and crisp. When you're ready for lunch or dinner, simply reheat the chicken and rice, then assemble your bowl with your fresh toppings. Yes, you absolutely can microwave your Bibibop bowl components, just be mindful of not overcooking the veggies if they're already cooked. This makes for super convenient, healthy meals throughout the week!
