Creamy Shrimp-Stuffed Catfish with Spinach and Cheese

Ingredients:

4 Heartland catfish fillets (6 oz each)

4 oz cream cheese, softened

1/2 cup shredded mozzarella

1/3 cup grated parmesan cheese

1/2 cup frozen spinach, thawed and drained

1/4 tsp garlic powder

1/8 tsp red pepper flakes

3 tbsp olive oil (divided)

1 tsp kosher salt

1/2 tsp freshly ground black pepper

2 tbsp butter

Juice of 1/2 lemon

1/2 cup cooked shrimp (optional: replace with crab meat)

Instructions:

In a bowl, mix the softened cream cheese, mozzarella, parmesan, spinach, garlic powder, and red pepper flakes until combined. Keep at room temperature.

Drizzle the catfish fillets with 1 tbsp olive oil and sprinkle with salt and pepper. Rub the seasonings evenly over the fish.

Slice each fillet in half and stuff each with 1/4 of the spinach and cheese mixture, adding shrimp or crab meat if desired.

Heat 2 tbsp olive oil, butter, and lemon juice in a large skillet over medium heat.

Once the mixture sizzles, add the stuffed catfish fillets. Sear for about 6 minutes, then flip and baste with the pan liquids.

Cook for an additional 6 minutes until the fish is cooked through. Serve hot and enjoy!
