Seriously, once you try this oil-based salsa, you'll wonder how you ever lived without it. It's not just a condiment; it's a flavor enhancer that brings a bold, authentic Mexican kick to any dish. And the best part? It’s surprisingly simple to whip up. So, you've got your ingredients ready – olive oil, garlic, a corn tortilla, chile ancho, and chiles de arbol. Here's a quick guide to making this magic happen: First, let's prep our chiles. For the chile ancho, you want to remove the stem and shake out most of the seeds. If you prefer a milder salsa, you can do the same for some of the chiles de arbol, but I usually leave most of them intact for that signature heat! Next, heat your olive oil in a pan over medium-low heat. This is crucial – you don't want the oil too hot, or your chiles will burn and turn bitter. Once it’s warm, add the garlic cloves. Let them gently sizzle until they're golden brown and fragrant. You can even give them a little 'rasp' or crush them slightly with the back of a spoon to release more flavor. Remove the garlic and set aside. Now, add the chile ancho and chiles de arbol to the warm oil. Fry them for just about 30 seconds to a minute, continually stirring.
