I have found that using flank steak is ideal because it is lean yet tender once properly marinated. The marinade ingredients like soy sauce, egg white, baking soda, and white pepper help tenderize the beef and create a pleasant texture when cooked. Corn starch is essential for that slightly crispy finish when frying. The sauce in this recipe packs a punch with its blend of soy sauce, oyster sauce, hoisin, ketchup, sriracha, and brown sugar, which balances sweetness, tang, and heat. Personally, I adjust the sriracha amount depending on how spicy I want the dish to be, sometimes adding more for an extra kick. The inclusion of vinegar in the cooking process adds the necessary acidity to brighten the flavors and replicate the iconic tang of Beijing Beef. For the vegetables, I usually use a crisp white onion and red bell pepper to add color and a bit of crunch. The minced garlic is crucial to infuse the dish with aroma and depth. Tossing the vegetables briefly ensures they retain their texture without becoming soggy. One tip for home cooks: prepare the corn starch slurry (water mixed with corn starch) just before adding it to the pan, as it thickens quickly. This will help achieve a glossy and thickened sauce that clings beautifully to the beef and veggies. Overall, cooking Beijing Beef at home is surprisingly straightforward and more wholesome than takeout versions. It’s a dish that brings bold flavors and satisfying textures with familiar ingredients you likely already have. Give this recipe a try and customize the spice and sweetness levels to suit your taste—your dinner table will thank you!
