cabbage and chicken...yes chicken!

so there's a little back story to this! My family and I try not to go into Walmart unless it's a necessity! Because of this we do a lot of delivery orders! 🙌🏻 apparently our shopper didn't know the difference between iceburg lettuce and a head of cabbage...
after being diagnosed with high cholesterol and receiving this cabbage...instead of my lettuce, I figured I better start finding some recipes!!
did you know 90% of recipes with cabbage and meat is sausage?? which means a no go! so I had to get creative!
so I took a stick of butter, cut up my cabbage and stared inside my fridge. all of this was random mind you, I have never cooked cabbage before this!!! so this is what I added!
1 red bell pepper
1 purple onion
salt
pepper
garlic powder
onion powder
peprika
and the head of lettuce with butter.
I put that in my cast iron Dutch oven and threw it the oven on 350 and started my chicken. all I had was one breast so, I sliced it and put it in my enameled skillet and cooked with the same seasonings but instead of butter I used olive oil.
once the chicken was done I through it in the food processor and then added to my Dutch oven. then I added about a cup of chicken broth to give everything some good flavor!
now none of this was planned or measured!!! but it turned out to be one of the best meals I've had in a long time! tasted like chicken fajitas!! next time I will add one or two more bell peppers! let me know what you think!
