chicken salad 6 carbs and under budget

#lemon8challenge #lemon8badgehunt

let's go back to the basics! we don't always have to have a huge meal especially when it's a quick lunch at work! no reason to spend more by going to a fast food place and paying $15-$20 per day when with this you can spend $20 for over a week of lunches!!

spring mix lettuce-carb free!

cheese-1 carb

tomatoes-1 carb

chicken-3 carbs

ranch-1 carb

now of course your portions matter! so make sure you are checking your serving size! I try to make everything from scratch but in a pinch this really helps! you don't feel over stuffed and can keep it in your work fridge to make it the day of! (no soggy lettuce!)

... Read moreWhen it comes to maintaining a low-carb diet while managing your budget, this chicken salad recipe is a lifesaver. I learned that preparing simple meals like this one can save a lot of money and time compared to daily takeout or fast food visits that easily add up to $15-$20 per day. By shopping smart—choosing store brands like Great Value for salad dressings and proteins—I managed to keep costs low while still eating nutritious, protein-packed meals. One trick I found helpful is measuring and controlling the servings to stay within that 6-carb limit. For example, spring mix lettuce is carb-free and provides volume without extra calories. Cheese and tomatoes add flavor and nutrients with only 1 carb each, while the chicken offers lean protein with about 3 carbs depending on the preparation. Ranch dressing adds creaminess but watch the portion to keep carbs in check. To avoid soggy lettuce, I store the spring mix separately and assemble the salad fresh at work, which keeps the texture crisp and enjoyable. This method also makes it easy to pack your lunch in advance and avoid unhealthy snacking. Making the salad from mostly scratch, rather than pre-made mixes, allows better control over ingredients and carbs. Overall, this economical chicken salad helps me stay on track with a low-carb diet, feel satisfied without overeating, and save money throughout the week. If you’re busy but want to keep your meals healthy and affordable, this recipe is definitely worth trying. Plus, it’s versatile—swap out dressings or veggies to suit your taste while keeping an eye on carb counts.
