*i often struggle to eat enough & posting this helps keep me accountable- i recognize that my food intake is not always balanced, but this is me trying my best*
This "morning" we started with an 11:00AM brunch consisting of a gf everything bagel- half with cream cheese & half with avocado. I also had a chocolate protein shake 🫶🏼
I was out and about running a few errands (petco) and was craving a starbucks frappucino so I went for it! Does anyone else overshare at the drive through?
I've found myself recently being completely honest when asked, "how's your day going?"
I don't think the barista wanted to know that my fish Ponyo died this morning.....and now you guys know too 🥸
At 6:45 my husband and I sat down for dinner where I made bone in pork chops on the stove top, boiled potatos and roasted brussle sprouts, onions and mushrooms. Of course throughout the day stayed hydrated with my water and celtic salt.
Lastly, I had a cookie from my batch yesterday of gluten free lucky charms cookies. 10/10 would reccomend.
... Read moreHey Lemon8 fam! So many of you loved my recent 'What I Eat In A Day' post, and I wanted to dive a little deeper into some of my go-to choices and tips, especially for staying on track with gluten-free options and finding that daily balance.
Finding a good gluten-free bagel has been a game-changer for my brunches! I usually toast an 'everything' bagel and top half with creamy avocado and the other with cream cheese. If you're new to GF, don't be afraid to try different brands until you find your perfect match. Toasting them makes all the difference!
A quick chocolate protein shake is another staple, especially when I need a fast, filling boost. I blend protein powder with banana and almond milk, but it's super customizable with berries or nut butter. Finding a powder that mixes well and tastes great is key!
We all have our indulgences, and a Starbucks Frappuccino hits the spot sometimes. While I try to keep everyday choices healthy, there's nothing wrong with enjoying a treat. You can ask for sugar-free syrups or skip the whipped cream for a lighter option, but sometimes you just need that full-on Java Chip experience to brighten your day.
Dinner is when I get a bit more creative in the kitchen. Cooking flavorful pork chops on the stovetop is quick and simple, especially seasoned with garlic and rosemary. Pairing them with a medley of roasted vegetables like Brussels sprouts, onions, and mushrooms (tossed with olive oil and sea salt) is delicious and healthy. And don't forget the potatoes – whether boiled or roasted, they're the ultimate comfort side.
Hydration is key, and I always sip water throughout the day. Adding a pinch of Celtic salt helps replenish electrolytes, keeping me energized on busy days.
And for a sweet ending, my homemade gluten-free Lucky Charms cookies are a dream! Baking GF doesn't have to be complicated, and a good GF flour blend works wonders. That cookie from my original post was absolutely 10/10!
It's a journey finding what works for your body and lifestyle. Being honest about my struggles and celebrating small wins, like a delicious GF bagel or a perfectly cooked dinner, helps me stay accountable. Sometimes, even the comfort of a little French Bulldog wrapped in a blanket can make a day better, even when life throws curveballs.
