protein pasta salad
being gluten free doesn't mean you have to miss out on all of the yummy foods!
i've put together a delicious & easy pasta salad, with added protein from the noodle choice 🍅
first you'll want to assemble all of your ingredients: noodles, cucumbers, olives, tomatoes, onions, orange pepper, feta cheese, seasoning & italian dressing.
most of my ingredients were purchased from either walmart, Aldi, or Trader Joes!!!
as you cook your 🍜, chop all of your veggies and add them to a bowl. you'll then want to season with your heart!
once your 🍜 are ready, rinse them under cold water and then drain and add your zesty italian dressing.
mix together all of your ingredients.
bonus tip ✅, shake the bowl with everything in it!
the longer it marinates, the better it tastes!

I absolutely love how versatile and satisfying a good protein pasta salad can be, especially when you're focusing on healthy meal prep! This gluten-free version is a game-changer for busy weeks, ensuring you always have a nutritious and delicious option ready to go. What I've found is that preparing a big batch on Sunday saves so much time and stress during the weekdays. One of the best things about using protein-rich pasta, like the one in this recipe, is that it significantly boosts the nutritional value. Not only does it offer around 12g of protein per serving, keeping you feeling full and energized, but some varieties are also a good source of iron and provide a decent amount of fiber. This combination is fantastic for digestion and overall well-being, especially when paired with all those fresh veggies. Now, if you're like me and often find yourself searching for "high protein Caesar pasta salad" or just a "protein pasta Caesar salad," you're in luck! While this recipe uses a zesty Italian dressing, it's incredibly easy to adapt it to satisfy that Caesar craving. My favorite trick is to swap out the Italian dressing for a creamy, good-quality Caesar dressing (make sure it's gluten-free if that's your preference!). Then, I’ll add some finely chopped romaine lettuce for that essential crunch and a sprinkle of Parmesan or a dairy-free alternative. For an extra punch of protein and flavor, grilled chicken or baked chickpeas fit perfectly. You can even toss in some gluten-free croutons right before serving to keep them from getting soggy. Beyond the Caesar twist, don’t be afraid to get creative with your ingredients! I often experiment with different veggies based on what’s in season or what I grab from Walmart, Aldi, or Trader Joe's. Bell peppers of various colors, red onion, cherry tomatoes, and cucumbers are always winners. For added healthy fats and creaminess, sliced avocado is a fantastic addition. You can also play around with your protein source – shredded rotisserie chicken, canned tuna, or even white beans can be swapped in for variety. When it comes to seasonings used, don’t just "season with your heart" (though that's a good start!). I like to build layers of flavor. Beyond salt and pepper, I often reach for garlic powder, onion powder, dried oregano, and a touch of dried basil. A pinch of red pepper flakes can add a nice subtle kick. Remember, the longer this salad marinates, the more those flavors meld together – so letting it sit in the fridge overnight truly makes a difference. For optimal meal prep, store your protein pasta salad in airtight containers. If you’re adding delicate greens like romaine for a Caesar version, it’s best to add them just before serving to maintain their crispness. This recipe is a lifesaver for healthy lunches, picnics, or a quick, satisfying dinner when you don't feel like cooking much. Enjoy!

Looks good 😍
