They were NOT lying about the protein bagels

I was feeling spontaneous so for this week’s meal prep I made the viral greek yogurt bagels. Now I’m not always a recipe gal…so I pretty much just threw all the ingredients in a bowl kneaded the dough formed the shape put toppings on and threw them in the oven and watched them until they looked like a bagel. Like I said below, you HAVE to let them rest!!!!

RECIPE

Ingredients: 2 cups all purpose flour, 1.5 cups nonfat greek yogurt, 3 tsps baking powder, 1 tsp salt, 1 egg (for egg wash), any toppings you want (i used dried rosemary and everything bagel seasoning)

Instructions:

1) preheat your oven to 375° and put some parchment paper on a pan, grease it

2) throw everything but the eggs into a bowl

3) knead the dough

4) separate into 4 chunks, you can do more or less

5) roll into a flat ball and poke a hole in the middle

6) crack the egg into a small bowl and whisk it with a fork and brush it over the bagels

7) top with everything bagel seasoning and whatever else you want i added dried rosemary

8) bake it until it looks like a bagel, at least 20 mins the rest depends on your oven

9) MOST IMPORTANT PART: Let. Them. Rest. If you do not let them rest for at least 20 mins but preferably an hour, the texture will be gummy and weird. if you want to try it hot you make a little tiny bagel or piece that you can eat but do NOT touch the rest when they come out. If you don’t let them rest all of your work will be wasted

Notes:

- People have played around with the flour to yogurt ration, a different ration works for everyone depending on the yogurt they use and other things. I’ve tried a 1:1 ratio and the dough was too difficult to work with, today I tried 1:0.75 and that was better. Next time I will try it with a 0.5:1 ratio and see if that is better for me

- I usual oil my hands while working with the dough to help prevent it from sticking

- You don’t HAVE to grease the parchment paper but it does help with sticking
