I recently tried making this Pan de Platano recipe when I had some overripe bananas sitting on my counter. Using 3 bananas, almond flour, and a touch of olive oil gave the bread a moist texture and a rich flavor that was perfect for breakfast or a snack. One thing I learned is that swapping regular flour for almond flour adds a nutty taste and makes it gluten-free, which is great if you’re looking for healthier alternatives. I also added a pinch of baking powder (polvo blanco para hornear) to help it rise a bit, which made the texture lighter than I expected. For sweetening, you can use your preferred sugar type—you might try coconut sugar or honey for a different flavor profile. Adding vanilla extract boosted the aroma wonderfully. When mixing everything, using a baking spray or brushing olive oil on the pan helps prevent sticking. I baked it at 350 degrees Fahrenheit for about one hour, just like the recipe says, and it came out perfectly golden brown on top. This bread is super versatile—you can enjoy it plain, or toast slices and spread a little butter or jam. Also, it's great for reducing food waste by using bananas that are getting too ripe. I highly recommend giving it a shot if you want a homemade, easy, and healthy banana bread alternative!
