DOUGH (I doubled everything):

In a mixing bowl

• 130g sourdough discard

• 282g filtered water

• 1 1/2 tsp sea salt

• 530g unbleached white flour

Mix & 3 sets of stretch and folds, 30 min between each. Cover for 4-6 hours or when doubled in size.

AFTER DOUGH RISES:

flatten dough out into a large rectangle shape, then sprinkle in

• 1/2 cup of coconut sugar

• 1/2 cup brown sugar

• 2 tbsp cinnamon

• 3-4 tbsp melted coconut oil

avoid the edges

Start rolling the dough and mixture in the spiral shape. Cut the rolls about 2 inches apart or to your liking.

In another baking dish add 2 tbsp heavy whipping cream. Add the rolls to the dish with the cinnamon swirl facing upwards.

Baked on 350 degrees for 25-35 minutes. (If the rolls are thicker in size then also cook 425 degrees for 14 minutes).
