Stuffed butternut squash

1. Butternut squash

Season/score

Fall spices (cinnamon, nutmeg 1tsp each)

Oregano, sage (1tsp)

Stuffed with:

1 bunch Kale or 1/2 bag

Apple (1 apple)

Ground turkey (1 package)

Sausage ( I used sweet you can use spicy sausage if you like)

1/2 sweet onion

1/2 cup chopped Pecans

2-4tbs Avocado oil

First pre heat oven to 450

Cut squash in half then scoop out seeds

I use a wet paper towel under my cutting board so it doesn’t move. Score by cutting slightly not all the way through in one direction. And then the opposite kind of like a criss cross

Place squash cut side up on a large baking sheet. Brush with 1 tbsp of avocado oil each side and sprinkle with salt and pepper. Bake for 30 minutes.

Chop all ingredients I do bite size while squash bakes

In a saucepan add 1tsp avocado oil then cook your ground turkey, sausage along with your onion

After cleaning your kale add it in the last few minutes

move to a bowl add in apple and pecans

Carefully remove the squash add to a tray or plate and take your mixture and stuff it with the ground turkey sausage mixture sprinkle some cinnamon on top and enjoy
